Crafted at Casa Tradición (NOM 1595) in Jalisco from 100% Tequilana Weber Blue Agave, the piñas are slow-cooked in traditional stone ovens for at least 72 hours, fermented with a proprietary yeast, double-distilled and then aged for eight months in hand-selected American oak ex-bourbon barrels. The result is remarkably smooth and dessert-like: vanilla, caramelised agave and toasted oak on the nose; maple, butterscotch, honey and a touch of cinnamon on the palate; and a long, warming finish.
